HISTORY
In 1990, Thurgau master cheesemaker Ueli Moser took over his parents’ cheese dairy in Lustdorf together with his wife Patricia. Having grown up with Emmental cheese, his true passion lay in soft cheese. In 1996, Moser received his first award for an original creation: Riesling & Sylvaner soft cheese matured in the then wine of the same name.
Three years and five new products later, Ueli and Patricia Moser founded Weichkäserei bonCas AG and relocated production from Thurgau to Dotzigen in the Bernese Seeland region. Using milk from the surrounding area and the nearby Jura, they developed traditional white-mould cheeses, full-fat cheeses matured in white wine, and creamy soft cheeses.
In 2007, bonCas began exporting and launched the premium brand Moser. The new specialties have since been regularly honored with awards and prizes in Switzerland and Germany.
Growing demand and sales eventually exceeded the available space, and after 24 years in Dotzigen, bonCas moved into its new production facility in Bettlach in 2023. Even in the modern new cheese dairy, the key production steps are still carried out by hand—because only with intuition and a love of craftsmanship can a cheese become a truly distinctive delicacy.
In January 2026, the second generation took over the company with Darja and Dennis Moser. Darja Moser is a sales and marketing specialist, while Dennis Moser, after completing a degree in business administration, also trained as a dairy technologist. Together with all employees, they continue to pursue what unites everyone at bonCas: passion, sensory expertise, and professional know-how—to nurture and further develop a range of currently twenty Swiss soft cheese specialties at the highest level.
