You recognize it at first sight: This cheese is – peppery – hot. Its white surface, covered in a thin layer of mold, is sprinkled with Alpine chili from the Bernese Oberland. Inside, hidden in the center of this small cheese made from organic whole milk, is a sophisticated garlic-pepper mixture, crafted by hand. Spices up a “Gschwellti”, boiled potatoes, a Swiss specialty, and other foods.
