Moser Chardonnay wrapped In Serrano ham with dates

Recipe:

Slice the green parts from the spring onions into 5 cm strips, and cut the Chardonnay into 6 slices. Halve the dates, remove pits.
Stuff each date with a slice of cheese;
lay strips of spring onion greens on top.
Fold the ham slices in half lengthwise and wrap one slice around each stuffed date. Fry in hot olive oil in a frying pan, turning to cook all sides.
Serve with mustard and sour cream sauce.

Mustard and sour cream sauce:
Stir all ingredients together. Enjoy warm or cold.

Good to know:
Serrano ham is an air-dried Spanish ham known for its characteristic lean meat, smooth texture (there is very little stringiness to it) and subtle mellow aroma.
It is made from the meat of a light-skinned breed of pigs,
which is why it is also called jamón de pata blanca
(white hoof ham) in Spanish.

Ingredients:

½  Moser Chardonnay
6 jumbo-sized dates
6 slices of Serrano ham or
or other dry-cured ham
Green tops from 1 bunch of spring onions
Olive oil for frying

Mustard and sour cream sauce:
4 tbsp sour cream (demi-crème)
4 tbsp coarse-grain mustard
1 bunch chives, finely chopped
